Jessica developed a passion for cooking at a very young age helping her grandmother cook traditional Slovenian food. Always an avid home cook, after graduation with a BA in Psychology from the University of Akron, she decided to go back to the restaurant industry and focus on her true love of cooking. At Vaccaro’s Trattoria in 2007 she began working as a server and bartender where she was introduced to higher end gourmet food. Here she became very knowledgeable about food and wine pairings, the art of plating, and traditional ingredients. Eventually making her way into the pantry and helping re-open Vaccaro’s pizza and Catering only motivated her to learn more. In 2010 she made her way to Russo’s Restaurant where, through David Russo’s instruction, she quickly advanced from pantry to baker and line cook. During school she developed a fascination with South American and Mexican cultures and naturally that translated into a desire to study the cuisine. Finding herself with the opportunity to work with Zack on his venture seemed to be serendipitous.
